Class Information
One month courses are certificate courses designed to give you a thorough grounding in all the main cookery skills, whether you want simply to cook better at home, cook in chalet for ski season or cater for small events. Light lunch included every day and plenty of food to take home ( to serve one).
The main skills covered are:
knife skills
sauces(white, brown, hollandaise)
pastry- shortcrust, choux, filo
meat&poultry- jointing and boning chickens, slow cooking, basic butchery, pork fillet
bread- basic and using starter
fish- filleting and skinning flat and round fish, cooking fish, how to choose fish
shellfish-prawns and mussels
working with gelatine
souffles& egg whites
meringues
cakes- creamed and whisked
biscuits
batters-yorkshire puddings, crepes
sugar syrups
ice cream
chocolate
green vegetables
pulses and grains
