Class Information

These cookery days are designed to bring work colleagues closer together when they team up to prepare a delicious 3 course lunch or dinner.

The day is designed to be fun and challenging with teams working under the watchful eye of Kate Hughes and her staff to create a meal for all to share.

Select from the following :

Menu one:

Smoked trout and watercress tartlet with dill and lemon sauce, mixed leaves

Boned stuffed chicken legs with mushrooms and pancetta, boulangere potatoes, turned carrots and courgettes, Madeira sauce

Chocolate roulade with fresh orange segments

 

Menu two:

 

Twice baked goats cheese soufflé with red pepper sauce, mixed leaves

Filleted trout wrapped in prosciutto, pommes anna (layered potato dish a bit like dauphinoise without cream), julienned vegetables

Tarte au citron

 

Menu three:

 

Watercress roulade with goats cheese (or other soft cheese) and garlic, mixed leaves

Rack of lamb with mustard and herb crust, dauphinoise potatoes, green beans, port and redcurrant jus

Individual glazed apple tarts with Calvados crème anglaise

 

Menu four:

 

Seared scallops with shallot puree, clementine and rocket salad, sourdough bread rolls

Pork medallions with soy, sesame and honey glaze, wilted spinach, fondant potatoes

Chocolate profiteroles

“Really enjoyed the day and think they got everything just right with the demo beforehand and then being around to help and us all sharing the tasks.  I always struggle with the timing of everything but even that seemed okay as we were not sitting around waiting for anything.
 
It was something really different to do so we are going to have to come up with something original for our next day out. Excellent event and couldn’t think of much to improve it.”
